
These scrumptious vegan muffins are so soft, and fluffy that I can say they are the best homemade muffins ever. Perfect for your kid’s lunch box. For best results closely follow the recipe.
Ingredients:
- 2 mashed bananas
- 1 ½ cup of flour
- 1 ½ tsp of baking powder
- ¼ cup + 1 tbsp cornflour
- 1 tsp salt
- ½ tsp baking soda
- 1 cup vegetable oil
- ½ cup Caster sugar
- ½ cup Brown sugar
- 1 ½ tsp Vanilla essence
- 1 cup soyamilk
- Chocochips (optional)
Ingredients for Streusel:
- ¼ cup raw sugar
- 5 tbsp flour
- 2 tbsp vegan butter
Directions :
- Sieve flour, cornflour, baking powder, baking soda and salt. Repeat it three times.
- Beat oil, sugar, vanilla essence and mashed bananas.
- Gently fold in flour, add soya milk. Continue mixing until it’s combined equally.
- Pour the batter into the greaseproof muffin liners.
- Mix all the streusel ingredients until crumbly like sand. Sprinkle gently on muffin batter. I also like to sprinkle a few choco chips.
- Bake for 20 to 25mins at 180° C until a toothpick inserted into the muffin comes out clean.
