Vegan Benedict

The best savoury breakfast with tofu patties. Enjoy the fancy brunch at home with your partner. It’s a simple recipe which you can easily make in your kitchen.

Ingredients:

  • 250 gm firm tofu 
  • 1 cup baby spinach
  • Bread of your choice (I used multigrain bread)
  • Chives chopped

For marination:

  • 2 tbsp olive oil
  • 1 tbsp nutritional yeast
  • ½ tsp kala namak (black salt)
  • ½ tsp garlic powder 
  • ½ tsp onion powder
  • ½ tsp turmeric powder
  • ⅛ tsp pepper
  • ⅛ tsp salt

Procedure:

  1. Squeeze water completely from tofu by pressing it with heavy objects like a chopping board for 30 mins. Then slice tofu into ½ inch thick circle or square shape.
  2. Marinate the tofu slice by coating all the marination ingredients, leave it for 15 mins.
  3. Pan fry the marinated tofu until golden brown at the edges on both sides.
  4. Saute the spinach in a tsp of oil and keep aside.
  5. Toast the bread with vegan butter
  6. To assemble, place the toasted bread slice and top it with sauteed spinach, pan fried tofu, and smother it with hollandaise sauce and garnish with chives.
