Vegan Oatmeal Cookies

These ultra soft and chewy cookies are full of flavour. Vegan Oatmeal Cookies will be your next favourite and you will make many batches of them. Your family will not be looking forward for any cookies from the store and that’s the charm of home baking/cooking, you use all the best ingredients and made with lot of love.

Ingredients: 

  • ½ cup brown sugar
  • ½ white sugar
  • 1 cup vegan butter 
  • 1 tsp vanilla extract 
  • 1 ½ cup flour 
  • ½ tsp salt
  • 1 tsp baking soda
  • 2 tbsp boiling water
  • 2 cups rolled oats
  • ½ cup raisins
  • ½ cup semi-sweet chocolate chips

Procedure :

  1. Beat butter, sugars and vanilla until light and fluffy.
  2. Add flour and salt. Mix well
  3. Dissolve baking soda in boiling water and add to mixture. Stir in oats, raisins and choco chips. Keep the dough in the fridge for 4 to 5 hrs or overnight is best.
  4. Drop a scoop of batter onto an ungreased baking sheet (See Pic1). Bake at 175°C for 10-12 mins(See Pic2). 
  5. Don’t over bake
  6. Makes 2 dozen cookies.

Notes:

1. Vegan butter can be replaced by regular unsalted butter if you are not vegan.
