This recipe is from my mom’s 90’s collection of recipes. I couldn’t believe that I got a gluten free recipe, which make It classic yet contemporary. You can surely relish this barfi with your family and a good give away mithai for Diwali. I am so glad to share this recipe with you. - 3-4 potatoes
- 1 cup milk powder
- 1 cup butter
- 2 cups sugar
- 3 tbsp cocoa powder
- Wash and pierce the potatoes with a fork for easy cooking. Don’t peel the potatoes and put them in the microwave for 10 mins. Keep checking for doneness after 8 mins.
- After the potatoes have cooled, peel and mash them. Add butter, milk powder, sugar and mix well.
- Put the mixture on a hard bottom pan and cook at medium heat and keep stirring till the mixture starts leaving the sides and swirls into a bowl.
- Pour into a greased plate and let it cool down and keep in a fridge for 15-20 mins then cut it into pieces of desired shapes.
