Gajar Ka Halwa is the classic winter dessert of India in every home. This recipe brings your family closer together, because everyone needs to give a hand to keep stirring. I definitely follow the long authentic process because the taste of the halwa makes all the hard work worth it.
Ingredients:
- 2 kgs of red carrot
- 2 litres of double cream milk
- ½ kg of khoya (optional)
- 1 can of condensed milk
- 1 cup of slivered almonds and pistachios
- 2 tbsp of ghee
- 2 cups of sugar
Procedure:
- Peel and grate red carrot
- Take a hard bottom pan and boil milk in it
- Cook the grated carrot in the milk, keep stirring until the milk evaporates.
- Add condensed milk, sugar, (khoya is optional). Khoya makes the halwa more creamy and rich.
- Fry the dry fruits in a small pan in ghee. Then mix it in Halwa.
- To get the milk evaporated it takes about 4 hours. But the end result makes it all worth it.
