Gajar Ka Halwa

Gajar Ka Halwa is the classic winter dessert of India in every home. This recipe brings your family closer together, because everyone needs to give a hand to keep stirring. I definitely follow the long authentic process because the taste of the halwa makes all the hard work worth it.

Ingredients:

  • 2 kgs of red carrot 
  • 2 litres of double cream milk
  • ½ kg of khoya (optional)
  • 1 can of condensed milk
  • 1 cup of slivered almonds and pistachios
  • 2 tbsp of ghee
  • 2 cups of sugar

Procedure:

  1. Peel and grate red carrot 
  2. Take a hard bottom pan and boil milk in it
  3. Cook the grated carrot in the milk, keep stirring until the milk evaporates.
  4. Add condensed milk, sugar, (khoya is optional). Khoya makes the halwa more creamy and rich.
  5. Fry the dry fruits in a small pan in ghee. Then mix it in Halwa. 
  6. To get the milk evaporated it takes about 4 hours. But the end result makes it all worth it.
