Ingredients :
- ½ cup cooked tricolour Quinoa
- ½ cup halved cherry tomatoes
- ½ cup chopped cucumber
- ½ cup chopped onion
- 1 cup chopped lettuce
Dressing :
- 1 tbsp olive oil
- Salt & Pepper
- 1 ½ tbsp lemon juice
- 1 tbsp dijon mustard
- 1 tsp cumin
Procedure :
- Soak quinoa of your choice in water for an hour then wash it, double the water quantity to the quantity of quinoa. Cook till water evaporates. Let it cool.
- Mix all veggies.
- Pour the dressing and give a nice mix.
