Cluster Beans fry (Goruchikudukaya vepudu)

Cluster beans are full of fibre, a healthy option to reduce cholesterol. When you buy cluster beans check for tender ones that is the secret and follow this recipe. Give it a try.

Ingredients :

  • ¼ kg cluster beans
  • 2 green chillies
  • 1 tsp mustard seeds
  • 2 tsp chana dal
  • ¼ cup chopped onions
  • 5 tbsp oil
  • Salt as per taste

Ingredients for masala : 

  • 7-8 dry red chillies
  • 1 tbsp dry coconut
  • 1 tbsp peanuts
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tbsp roasted chana dal
  • 3 garlic cloves

Procedure :

  1. Remove the side string of the clutter beans and cut. Wash and boil them.
  2. Prepare masala by dry roasting all the ingredients except garlic.
  3. Grind all the roasted ingredients with garlic and keep aside.
  4. In a pan heat oil add green chili, mustard seeds, chana dal and chopped onions. Fry for two minutes.
  5. Add boiled cluster beans after frying for 1 min. Add prepared masala and mix gently.
  6. Serve with rice or roti.
