Turai Chutney (Bairkai Pachadi)

Ridge gourd / Turai has so many health benefits and it is completely diabetic friendly. You must try this chutney; it’s simple, yummy and healthy.

Ingredients:

  • 300gms Turai / Ridge gourd
  • 1 tbsp oil
  • 4 garlic cloves
  • 1 tbsp cumin
  • 4-5 green chillies
  • 3-4 red chillies
  • Salt asper taste
  • 1 tbsp tamarind paste
  • 4-5 sprigs of coriander

Tempering ingredients:

  • 1 tsp mustard
  • 2 tbsp oil
  • 3 red chillies
  • Pinch of asafoetida
  • Curry leaves

Procedure:

  1. Peel ridge gourd and cut it into pieces.
  2. Heat a tbsp of oil, saute garlic, cumin, green chilli, red chilli, for a minute. Then add ridge gourd pieces and salt. Cook until tender.
  3. After it is cool, grind.
  4. Heat tempering ingredients and pour over chutney.
