Making kachori at home can be a bit time-consuming, but the end result is definitely worth it. And the chaat version with yogurt, imli chutney, and green chutney is absolutely delicious. Don’t forget to share your experience and feedback with me once you make it. Happy cooking!

Ingredients for dough:
- 4 cups flour
- 8 tbsp oil
- 1 tsp carom seeds
- Salt
- ½ cup + Water
Ingredients for stuffing:
- 2 ½ cups green peas
- 3 green chilli finely chopped
- 1 inch ginger grated
- 1 tsp cumin
- 1 tsp fennel
- 1 tsp nigella (Kalonji) seeds
- Salt
- 1 tsp chilli powder
- 1 tsp kitchen king masala
- ½ cup chopped coriander
Directions:
- Make dough using all the dough ingredients.
- For the stuffing, grinde the green peas coarsely in a mixer or food processor.
- Heat oil in a pan and add cumin, fennel and nigella seeds. Saute for a minute.
- Add grated ginger and chopped green chilli to the pan and saute for another minute.
- Add the coarsely ground peas to the pan along with salt, chilli powder, and kitchen king masala. Mix well and cook for 5-7 minutes on medium heat.
- Once the stuffing is cooked, add chopped coriander to it and mix well. Let it cool down.
- Make small balls of the dough and roll them into small circles.
- Place a spoonful of the stuffing in the center of each circle.
- Fold the edges of the circle towards the centre to cover the stuffing and make a ball again.
- Flatten the balls slightly and deep fry them in medium hot oil until they turn golden brown.
- Serve hot with chutney or sauce of your choice.
