Ingredients:
- 1 tbsp oil
- 3 cloves garlic, chopped
- 1 small bell pepper, chopped
- 1 bunch spinach, chopped and boiled
- ½ cup cashews, soaked
- Handful of basil leaves
- 1 tbsp nutritional yeast (optional)
- Salt
- 1 tbsp red pepper flakes
- 1 tsp black pepper
- 2 cups cooked spaghetti
- 1 tsp oregano
Directions:
- Heat a tablespoon of oil in a skillet over medium heat. Add three cloves of chopped garlic and one small chopped bell pepper. Sauté for a few minutes until the vegetables are tender and fragrant.
- Boil spaghetti and spinach separately.
- Grind spinach, sauteed garlic and bell pepper, soaked cashews, basil leaves, and nutritional yeast.Blend until smooth and creamy.
- Cook the green sauce with salt, red pepper flakes, and black pepper.
- Mix in spaghetti, and then add oregano.
- Serve with pan-fried cherry tomatoes.
