Black Bean Quinoa Salad

Quinoa and Black Bean is a great combination and is filled with different veggies that makes it absolutely delicious. Black Bean Quinoa Salad is full of nutrition and flavour. This is vegan, gluten free and a perfect addition to vegetarian meals.

Dressing :

  • ¼ cup olive oil
  • 3 tbsp lime juice
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • ¼ cup fresh coriander chopped
  • ½ tsp cumin powder
  • ½ tsp chilli powder
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt as per taste

Ingredients :

  • 1 cup cooked Quinoa (½ cup of raw Quinoa will make 1 cup cooked Quinoa)
  • ½ cup corn cooked
  • 1 can black beans
  • 15 cherry tomatoes halved
  • ⅓ cup onion chopped
  • 1 avocado sliced for serving

Procedure :

1. Mix dressing ingredients in a small jar, keep aside.

2. In a large mixing bowl, add Quinoa,corn,black beans,cherry tomatoes, onions.

3. Drizzle the dressing and gently mix.

4.Serve with sliced avocados.
