Eggless Pistachio cake

Pistachio nuts are a particularly flavorful and aromatic nut that are best when used in cakes. The green pistachio cake is a wonderful touch to the festive table that doesn’t require much effort at all.

Ingredients :

  • 1 cup Semolina (Suji)
  • ½ cup Pistachio (pista)
  • ½ cup sugar
  • ½ cup yogurt
  • ¼ cup oil
  • ½ cup +2 tbsp milk
  • 8-9 strands of saffron

Ingredients for sugar syrup :

  • ¼ cup Sugar
  • ¼ cup water
  • 7-8 strands of saffron
  • Ingredients for garnishing :
  • Powdered pistachio 2 tbsp
  • Dried rose petals 2 tbsp

Procedure :

  1. Grind Semolina, pistachio, sugar to a fine powder
  2. Whisk Yogurt and oil.
  3. Add saffron in warm milk and keep aside.
  4. Mix dry and wet ingredients, add saffron milk and keep it aside for 15 minutes.
  5. Finally add baking powder and transfer the batter in an 8 inch baking pan lined with baking paper and greased.Sprinkle pistachio powder and rose petals.
  6. I baked over a stove top using Kadhai with some salt in it and a stand.See video.
  7. Bake for 40 – 45 minutes and let it cool. Meanwhile make sugar syrup by boiling sugar and water until sugar dissolves and make the syrup slightly thick.
  8. Once the cake is cool pour sugar syrup and garnish with powdered pistachio and dried rose petals.
