Pistachio nuts are a particularly flavorful and aromatic nut that are best when used in cakes. The green pistachio cake is a wonderful touch to the festive table that doesn’t require much effort at all.

Ingredients :
- 1 cup Semolina (Suji)
- ½ cup Pistachio (pista)
- ½ cup sugar
- ½ cup yogurt
- ¼ cup oil
- ½ cup +2 tbsp milk
- 8-9 strands of saffron
Ingredients for sugar syrup :
- ¼ cup Sugar
- ¼ cup water
- 7-8 strands of saffron
- Ingredients for garnishing :
- Powdered pistachio 2 tbsp
- Dried rose petals 2 tbsp
Procedure :
- Grind Semolina, pistachio, sugar to a fine powder
- Whisk Yogurt and oil.
- Add saffron in warm milk and keep aside.
- Mix dry and wet ingredients, add saffron milk and keep it aside for 15 minutes.
- Finally add baking powder and transfer the batter in an 8 inch baking pan lined with baking paper and greased.Sprinkle pistachio powder and rose petals.
- I baked over a stove top using Kadhai with some salt in it and a stand.See video.
- Bake for 40 – 45 minutes and let it cool. Meanwhile make sugar syrup by boiling sugar and water until sugar dissolves and make the syrup slightly thick.
- Once the cake is cool pour sugar syrup and garnish with powdered pistachio and dried rose petals.
